Hearty Turkey Breast with Cherry Sauce     Rate/Review This Recipe

Ingredients

1 package PERDUE® Fresh Whole Turkey Breast
Salt & pepper
2 teaspoons dried thyme leaves
1 tablespoon butter
1 small shallot, minced (about 2 tablespoons)
1 can (15 ounce) dark cherries in heavy syrup
1/4 cup chicken stock
1/4 cup orange juice
2 tablespoons dry vermouth*
2 tablespoons Dijon-style mustard
*May substitute 2 tablespoons water or chicken broth.

 

Instructions
  1. Preheat oven 350°F. Season with salt, pepper and thyme.
  2. Place turkey in roasting pan with water in bottom, skin side up. Roast for 1-1 3/4 hours, until meat thermometer inserted into thickest part of breast registers 180°F.
  3. In saucepan, melt butter over medium heat and sauté shallots for 1 minute. Add cherries in syrup, chicken stock, orange juice, vermouth and mustard. Bring to boil over high heat, then reduce to low heat and simmer 5 minutes. Remove from heat and set aside. Baste turkey with cherry sauce once every 20 minutes.
  4. When turkey is done, remove from oven and slice thinly. Reheat sauce over medium heat. Place sauce in small dish and serve with sliced turkey.
  5. If desired, serve with wild rice pilaf.
