Ingredients
1 package PERDUE® Fresh Whole Turkey Breast Salt & pepper 2 teaspoons dried thyme leaves 1 tablespoon butter 1 small shallot, minced (about 2 tablespoons) 1 can (15 ounce) dark cherries in heavy syrup 1/4 cup chicken stock 1/4 cup orange juice 2 tablespoons dry vermouth* 2 tablespoons Dijon-style mustard *May substitute 2 tablespoons water or chicken broth.
Instructions
- Preheat oven 350°F. Season with salt, pepper and thyme.
- Place turkey in roasting pan with water in bottom, skin side up. Roast for 1-1 3/4 hours, until meat thermometer inserted into thickest part of breast registers 180°F.
- In saucepan, melt butter over medium heat and sauté shallots for 1 minute. Add cherries in syrup, chicken stock, orange juice, vermouth and mustard. Bring to boil over high heat, then reduce to low heat and simmer 5 minutes. Remove from heat and set aside. Baste turkey with cherry sauce once every 20 minutes.
- When turkey is done, remove from oven and slice thinly. Reheat sauce over medium heat. Place sauce in small dish and serve with sliced turkey.
- If desired, serve with wild rice pilaf.
