Chili Roasted Turkey with Cool Cucumber-Mango Salsa     Rate/Review This Recipe

Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Turkey Breast Tenderloins
1 package (1.25-ounce) taco seasoning
1 teaspoon ground cumin
Salsa:
2 ripe mangos, diced
1 cucumber, peeled, seeded and diced
1/4 cup red onion, minced
1/4 cup lime juice
1 tablespoon vegetable oil
Salt and pepper, to taste
Lime slices to garnish, optional

 

Instructions
  1. Preheat oven to 500° F.
  2. Set turkey tenderloins on a foil-lined sheet pan. In a small bowl, stir together taco seasoning and cumin. Rub all sides of turkey with spice mix. Roast turkey 18 - 20 minutes, turning once, until firm. Remove and set aside.
  3. While turkey is roasting, make salsa. Stir together mango, cucumber, red onion, lime juice and oil. Season to taste with salt and pepper.
  4. To serve, slice turkey. Divide turkey among 6 plates and top with salsa. Garnish with lime slices, if desired.

I made this last night and we absolutely loved it! We decided to replace the turkey with chicken tenderloins; however, but the whole thing was terrific. Make sure you put the salsa on TOP of the meat - it makes all the flavor difference in the world. Will absolutely be making again!

As a side note - I made roasted red peppers with basil feta and walnuts as an appetizer/side dish and they went very well together!

I haven't tried it yet but is sounds real good and I will make it soon. I think the best accompainment to this dish is asparagus and that is how I am going to serve it.
