Chicken in Paprika Sauce

Ingredients

1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Thigh Filets
1 teaspoon salt
2 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 large tomato, seeded and chopped
2 medium potatoes, peeled and cut into 1/2-inch cubes
1/4 cup dry white wine
1 tablespoon sweet paprika

Instructions

  1. Sprinkle chicken with salt.  Heat oil in a large skillet over medium heat. Cook and stir onion, garlic and chicken, turning occasionally, until brown on all sides, 4 to 5 minutes. Stir in tomato and potatoes and cook 2 minutes longer. 
  2. Add the wine and the paprika and mix until well blended. Cover.
  3. Reduce heat and simmer 15 minutes or until chicken is fully cooked (thermometer inserted in the thickest part of the thigh registers 180°F.).
