Ingredients

3 ounces PERDUE® CARVING CLASSICS® Herb Rubbed Turkey Breast
1/2 cup iceburg lettuce, shredded
1/3 cup tomato, diced
1/4 cup red onion, diced
1 tablespoon jalapeno, diced
1 tablespoon cilantro, diced
2 teaspoons lime juice
1 tablespoon olive oil
1/3 cup avocado, diced
1 Bolillo bread roll (or 6-inch sub roll)

Instructions

  1. For salsa, combine tomato, red onion, jalapeno, cilantro, lime juice and olive oil. Leave to marinate 10-15 minutes. Strain liquid and reserve.
  2. To assemble sandwich, split Bolillo bread in half lengthwise and brush with reserved liquid from salsa.
  3. Layer turkey, lettuce, salsa and avocado on bottom half of bread. Add top half of bread and serve.
