Ingredients

2 cups PERDUE® SIMPLY SMART® Original Grilled Chicken Strips (22 oz.), Frozen
1/2 cup non-fat Greek yogurt
1 teaspoon lemon juice
1 tablespoon olive oil
1 teaspoon dill
1 teaspoon garlic, minced
1/4 cup cucumber, grated and seeded
Salt and pepper to taste
4 whole wheat pitas, warmed
1 1/2 cups Romaine lettuce, shredded
1/2 cup low-fat feta cheese crumbles
1/2 red onion, sliced
3 Roma tomatoes, diced
1/2 teaspoon lemon zest

Instructions

  1. Cook roasted chicken chunks according to the package instructions.
  2. Mix yogurt, lemon juice, lemon zest, olive oil, dill, pepper, garlic and grated cucumber in a small bowl.
  3. Warm pita bread in a toster or toaster oven.
  4. Lay pita bread down, spread with yogurt mixture and top with shredded romaine.
  5. Place 8 chicken chunks in the center of each pita and top with feta, onion and tomato. Fold pita in half and wrap with paper or foil.
