Crispy Chicken with Orange Mustard Sauce

Ingredients

1 package PERDUE® Refrigerated Whole Grain Breaded Chicken Breast Strips (12 oz.)
1/3 cup light mayonnaise
2 tablespoons orange marmalade
1 tablespoon Dijon mustard
1 tablespoon low-sodium soy sauce
1/4 teaspoon red pepper flakes, optional
1 pound steamed or grilled fresh asparagus or green beans, chilled

Instructions

  1. Heat chicken strips according to package directions.
  2. In a bowl combine mayonnaise, marmalade, mustard, soy sauce and red pepper flakes, if desired; mix well.
  3. For each serving, place three to four asparagus spears on each plate. Top with 2 whole grain chicken strips and drizzle with 2 tablespoons of orange-mustard dipping sauce.

Note

To grill asparagus or green beans, brush grill surface with oil olive and grill until tender (2-3 minutes). Chill and use as directed above.
