|1||package PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts (1.5 lbs.)|
|Juice and zest from 1 lime|
|Salt and pepper to taste|
|1/3||cup chipotle mayonnaise|
|5||sesame seed buns, toasted or grilled|
|5||red or green lettuce leaves|
|2/3||cup shredded, smoked Cheddar cheese or 5 slices smoked Cheddar cheese|
1. In gallon-size zippered plastic bag, place chicken breast and juice and zest from lime and toss to coat; season with salt and ground black pepper. Close zipper on bag and refrigerate at least 15 minutes or until ready to grill.
2. Spray grill or grill pan with vegetable cooking spray and preheat to medium-high heat. Grill chicken for about 3-4 minutes per side until cooked through and golden brown (thermometer inserted in the thickest part of chicken registers 170°F). Remove from grill and keep warm.
3. For each stack, spread grilled bun with 1 tablespoon chipotle mayonnaise and top with a lettuce leaf, 1 slice of tomato and one grilled chicken breast. Sprinkle top of chicken breast with 2 tablespoons cheese. Replace top of bun and serve.
