2 tablespoons olive oil
1/2 cup chopped ham
1 medium onion, chopped
1 package (8 ounces) mushrooms, sliced
1/2 cup sweet sherry wine or chicken broth
1 bay leaf


  1. Heat oil in large skillet over medium heat.  Sauté drumsticks 2 minutes per side until brown.
  2. Stir in ham, onion and mushroom.  Cook until tender and lightly brown, 4 to 5 minutes.  Add sherry and bay leaf. Cover and reduce heat.
  3. Simmer 20 minutes or until chicken is fully cooked (thermometer inserted in the thickest part of the drumstick registers 180°F.).

I added 4 oz. of sour cream and 1 pack chicken gravy mix with 1 tsp minced garlic and this came out great.
