1 package
4 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon ground pepper
Juice of 1 bitter orange (about 1/4 cup) (Alternate: 2 tablespoons each lime juice and orange juice)
1 large onion, sliced into rings
1/4 cup olive oil
2 medium carrots, peeled and diced
1/4 cup dry white cooking wine
1/2 cup peas


  1. Combine garlic, cumin, oregano, salt and pepper in a small bowl.  Spread mixture on chicken breasts. Sprinkle with juice and top with onions.  Cover and marinate in refrigerator about 1 hour.  Reserve marinade.
  2. Heat oil in a large skillet over medium heat.  Sauté chicken breasts 2 minutes per side until brown.  Add reserved marinade, carrots and cover.
  3. Reduce heat and simmer 15 minutes.  Stir in wine and peas.  Cook 5 minutes longer or until chicken is fully cooked (thermometer inserted in the thickest part of the breast registers 170°F.).
