Salt and pepper to taste
1/2 cup vegetable oil
2 cups plum sauce
1 cup Muscatel wine
1 cup
1 cup cooked chickpeas
1/2 cup sliced sausage


  1. Separate chicken into pieces.
  2. Season pieces with salt and pepper.
  3. In a pan heat oil and brown chicken on all sides.
  4. Mix plum sauce, wine and broth and ladle over chicken.
  5. Place browned chicken in an oven-safe dish, add chickpeas and decorate with the sausage on top.
  6. Bake at 325° F for 40 minutes, or until the thermometer indicates that the internal temperature of the chicken is at 180° F (82° C).
  7. Garnish with fresh lettuce if desired.
