Stuffed Breasts in Cider Sauce Recipe

1 package
6 slices of ham
Sufficient oil to brown chicken
2 cups cider
1 cup broth
1 cup chopped onions
1 cup chopped carrots
1 cup toasted pine nuts
1 cup fried baby squash
Salt and pepper to taste


  1. Introduce a sharp knife in the widest part of each chicken breast and make a deep incision to insert a ham slice into each breast.
  2. In a pan heat the oil and brown chicken on all sides.
  3. In an oven-safe dish mix oil, cider, broth, onions and carrots. Put the stuffed breasts on top of this mixture.
  4. Cover and bake for 45 minutes at 325° F.
  5. Remove the breasts, strain the sauce and heat until sauce is reduced by half.
  6. Baste the breasts with this sauce.
  7. Serve with toasted pine nuts and accompany with fried baby squash.
