Salt and pepper to taste
1 pound ground beef
1/2 cup pine nuts
1 egg
2 tablespoons Worcestershire Sauce
1/2 cup flour
1/2 cup oil
1/4 pound butter
1/4 cup wine
3 green apples, sliced
3 red apples, sliced
1 cup raisins


  1. Season chicken with salt and pepper.
  2. Mix ground beef with pine nuts, egg, some of the Worcestershire sauce, pepper and salt.
  3. Form a ball out of the above mixed ingredients (called a pilota) and dredge it in the flour. Heat the oil in a pan and brown the pilota on all sides.
  4. Stuff chicken with the browned pilota.
  5. Melt butter and add the wine. Set aside.
  6. Preheat the oven to 350°F. Place the chicken in the oven, and baste it frequently with the butter and wine mixture.
  7. Cook the chicken for approximately 2 1/4 hours, until PERFECT ROAST® Thermometer pops up and meat thermometer inserted in thickest part of thigh registers 180°
  8. Remove chicken from oven and set aside. Discard PERFECT ROAST® Thermometer. Leave drippings in roasting pan and cook the apples and raisins for 10-15 minutes over medium high heat.
  9. Remove the stuffing (pilota) from the chicken and cut into cubes.
  10. Serve the whole roasted chicken with the cubed pilota, the apples and raisins.
