Salt and pepper to taste
1/4 cup vegetable oil
1/2 cup chopped white onion
1/2 cup chopped cilantro
2 cups freshly squeezed mandarin/tangerine juice
2 cups chicken broth
1/2 cup white wine


  1. Separate the chicken into parts and season with salt and pepper.
  2. In a pan heat oil and brown the chicken parts on all sides.
  3. Add the onion, cilantro, mandarin/tangerine juice, broth and wine. Cook over medium heat for 10 minutes.
  4. After cooking for 10 minutes, transfer ingredients to an oven-safe dish and cook for approximately 20-25 minutes at 325º F.
