Salt to taste
2 tablespoons ginger, grated
Oil for frying
Oil for sauteing
2 peeled and cubed ripe plantains


  1. Season chicken with ginger and salt.
  2. In a pan, add oil and brown chicken breasts on both sides.
  3. Fry plantain cubes, in enough oil to cover, until they are golden brown. Drain excess oil on a paper towel.
  4. Serve the chicken on bed of fried ripe plantain cubes.
