Salt and pepper to taste
1 semi-ripe Tommy mango, peeled and cut into thin slices (garnish)
1/4 cup vegetable oil
White Sauce Ingredients:
1/2 pound margarine
3 tablespoons flour
2 cubes chicken bouillon
4 cups hot milk
1 teaspoon nutmeg
1/4 cup white wine
Mango Coulis Ingredients:
1 cup peeled and diced mango
1 cup water
1/2 cup white sugar
1 teaspoon vinegar


WHITE SAUCE INSTRUCTIONS:

  1. Heat the margarine in a saucepan, add flour, chicken bouillon and mix well. Bring to a boil.
  2. Add hot milk, nutmeg and wine, bring to a boil, stirring constantly. Set aside.

MANGO COULIS AND CHICKEN INSTRUCTIONS:

  1. Place all the mango coulis ingredients in a blender and mix until smooth. Pour mixture into a saucepan and cook over high heat until boiling. Set aside.
  2. Cut up chicken and season with salt and pepper
  3. Heat oil in a saucepan and brown chicken pieces on all sides.
  4. Pour prepared white sauce over chicken and cook for 10 minutes.
  5. Serve chicken over mango coulis.
  6. Garnish with Tommy mango slices.
