Salt and pepper to taste
1/4 cup vegetable oil
2 cups tomato puree or tomato paste with garlic
2 cups
1 cup red and green peppers, cut into julienne strips
1/2 cup long green onion, cut into rings
1/2 cup white wine


  1. Remove skin from chicken and season chicken with salt and pepper.
  2. Heat oil in a saucepan and brown chicken on all sides.
  3. Add tomato puree or paste, potatoes, peppers, and onion; simmer over medium heat for 20 minutes.
  4. Cover with white wine and bake at 325°F for 10 minutes.
