3 ounces frozen limeade concentrate (1/2 of a 6 ounce can)
1/2 cup chicken broth
1/2 cup coarsely chopped mint
1 tablespoon cornstarch
2 teaspoons minced jalapeno pepper
4 garlic cloves, minced or 1 teaspoon garlic powder
1/4 teaspoon ground cumin
Hot cooked rice flavored with cumin and mint*
Lime slices and fresh mint to garnish (optional)


  1. Cook chicken in large skillet according to package directions.  Remove chicken to a platter; cover and hold warm.
  2. In a blender, combine limeade concentrate, chicken broth, mint, cornstarch, jalapeno pepper, garlic and cumin.  Blend on high for 30 seconds.
  3. Pour mixture into skillet containing chicken pan juices.  Increase heat to medium-high.  Bring to a boil while stirring and boil until thickened, about 1 minute.
  4. Pour lime sauce over chicken breasts.  Serve with minted rice, if desired.

* While chicken is cooking, prepare 8 ounces of rice according to package directions adding 1/2 teaspoon ground cumin to water before cooking.  When rice is finished, drain and stir in 2 teaspoons finely chopped mint.
