ounces frozen limeade concentrate (1/2 of a 6 ounce can)

Hot cooked rice flavored with cumin and mint*

- Cook chicken in large skillet according to package directions. Remove chicken to a platter; cover and hold warm.
- In a blender, combine limeade concentrate, chicken broth, mint, cornstarch, jalapeno pepper, garlic and cumin. Blend on high for 30 seconds.
- Pour mixture into skillet containing chicken pan juices. Increase heat to medium-high. Bring to a boil while stirring and boil until thickened, about 1 minute.
- Pour lime sauce over chicken breasts. Serve with minted rice, if desired.
* While chicken is cooking, prepare 8 ounces of rice according to package directions adding 1/2 teaspoon ground cumin to water before cooking. When rice is finished, drain and stir in 2 teaspoons finely chopped mint.
