1 package
2 tablespoons all-purpose flour
3 tablespoons chopped fresh herbs (i.e. parsley, rosemary, thyme and oregano, or 1 tablespoon dried Italian herbs)
2 teaspoons olive oil
3 tablespoons minced onion
1 cup 99% fat-free chicken broth


  1. In a shallow dish, stir together flour and herbs.  Press the chicken into the flour mixture, coating both sides completely. 
  2. Warm olive oil in a large skillet over high heat.  Add chicken and brown on each side approximately 45 seconds. Remove chicken and set aside. 
  3. Reduce heat to low and add onion to pan. Cook 1 minute.  Add broth and chicken. Increase heat to medium-high and simmer about 4 minutes until meat thermometer inserted in center registers 170° F. and sauce has slightly thickened. 
  4. To serve, set chicken on plates and spoon sauce on top.

This chicken was very tender and quick but definitely bland. Next time I'll try simmering the broth with red pepper flakes. I served it over brown rice, will add finely diced jalapeños to rice also next time.

The chicken was very tender but a bit bland. Added shredded parmesan to top of chicken before serving and it was much better. The thin-sliced chicken is fast and easy to cook. Will make this again.
