tablespoon apple jack brandy or frozen apple juice concentrate
Salt and ground pepper to taste
Preheat oven to 350°F. Remove giblets. Rub bird inside and out with butter, poultry, seasoning and salt and pepper. Place apple, onion and celery inside body and neck cavities.
Place roaster, breast side up, in a shallow roasting pan in oven. Roast 2 to 2 1/2 hours or until PERFECT ROAST® Thermometer pops up and a meat thermometer inserted in thickest part of thigh registers 180°F.
Remove and discard PERFECT ROAST® Thermometer before carving.
Gravy (dressings, salsa, and toppers)
Pour pan juices into heatproof measuring cup or bowl. Skim off 4 tablespoons clear drippings from top and return to roasting pan. Skim off and discard remaining drippings, reserving degreased pan juices.
Add flour to roasting pan and cook, stirring over medium heat for 3 to 4 minutes, until flour mixture is lightly browned. Stir in reserved pan juices and enough water to make 2 cups of liquid. Add cream or half-and-half and brandy or apple juice concentrate.
Cook, stirring, until gravy is smooth and thickened. Season to taste with salt and pepper.

This was very easy to put together and smells absolutely delicious while cooking. However, the instructions on how to make the gravy is missing. Just the ingredients does not help someone who always fails at making gravy. 5 stars for smell - 2 starts for no gravy instructions.

Just making this now. It sounds delicious and is easy enough to prepare, and it smells great while it's cooking, however they neglect to give you instructions for the gravy. They only give the gravy ingredients but not the instructions. I'm not a gravy aficionado so that would have been helpful. As far as I'm concerned they lose two stars for that. Otherwise I'd have given it five for ease, fragrance and expected taste.

This recipe is wonderful! I have a few picky eaters and they actually request this for dinner. It is so easy to make - I have committed it to memory and make it almost weekly.

This recipe is so easy and delicious! My chicken was perfectly cooked and so moist. I guess I've been buying too many rotteserie chickens from the market. I will be making this recipe often.

I absolutely love this recipe. I had originally cooked it for my girlfriend and myself to try and found that it not only was VERY simple but it was a great tasting meal as well. The gravy was very good, very very smooth. I am however going to add just a bit more apple into the gravy to give it just a bit more of that apple taste. We loved it so much that I'm going to make it for a little family get together... Use this recipe!
