1/4 cup all-purpose flour
1/4 cup Dijon mustard
1/2 cup plain dry bread crumbs
2 tablespoons vegetable oil


  1. Cut fillets in half.
  2. Coat fillets with flour, shaking off excess; spread with mustard. Coat with bread crumbs.
  3. In large skillet over medium heat, heat oil.
  4. Add turkey and cook 2-3 minutes per side or until browned and fully cooked (thermometer inserted in fillet registers 170°F.)

The turkey takes much longer than 2-3 minutes per side to cook over medium heat and the coating burned.
