tablespoon minced fresh thyme or 1 teaspoon dried thyme leaves
Salt and ground pepper to taste
In wide, shallow bowl, combine oil, lemon juice, lemon peel, shallot and seasonings. Add chicken and turn to coat well. Cover and marinate in refrigerator at least 30 minutes.
Prepare outdoor grill for cooking or preheat broiler. Drain marinade into a small saucepan and bring to a boil over high heat; set aside.
Grill or broil chicken 6 to 8 inches from heat source 15 to 20 minutes until meat thermometer inserted in center registers 170º F. During cooking turn chicken 2 to 3 times, brushing occasionally with reserved marinade.

This was a nice, fresh spring dish, and was well received by the whole family.
