bagels (any flavor), each cut in half and toasted, if desired

cup Dijon mustard

tomatoes, thinly sliced

thin slices red onion

slices cheddar cheese
Preheat broiler. Place bagel halves on baking sheet.
Evenly spread bagel halves with mustard, then top each with sliced tomato, onion, chicken and cheese.
Broil until cheese is melted.

Always looking for quick, nutritous sandwich recipes. The added use of bagels is a real plus! Could also make using English Muffins and/or the new Sandwich Halves [Pepperidge Farms, Arnolds-come in Basic, Whole Wheat, and Multi-Grain]. Great use for my annual aquisition of Extra Sharp Vermont Cheddar Cheese from the Montgomery County Fair!
