Salt and ground pepper to taste
Ground sage
5 slices ham
1/3 cup Marsala or Madeira wine
1 tablespoon butter
2 teaspoons minced fresh parsley
Fresh sage leaves (optional)


  1. Season chicken with sage, salt and pepper to taste.
  2. Top each cutlet with slice of ham, pressing lightly so ham sticks to chicken.
  3. In large, nonstick skillet over medium-high heat, place "saltimboccas," ham-side down. Cook 2 minutes on each side or until cooked through and lightly browned. Remove to warm serving platter.
  4. Add Marsala to skillet; cook 2 minutes or until liquid is reduced to about one-third, stirring often. Whisk in butter.
  5. To serve, pour pan sauce over cutlets; sprinkle with parsley and garnish, if desired, with fresh sage leaves.
