1 package
Salt and pepper to taste
1/2 cup all-purpose flour
3 eggs, beaten
1/3 cup grated Parmesan or Romano Cheese, divided
1/4 cup olive oil, divided
1 box (8 ounces) tubular pasta (penne or ziti for example)
3 cups small fresh broccoli florets
1 tablespoon butter
3 tablespoons lemon juice
2 tablespoons capers, drained
1 lemon, thinly sliced
1 tablespoon minced parsley


  1. Preheat oven to 250°F. Season chicken breasts with salt and pepper. Measure flour onto wax paper.
  2. In shallow dish, beat eggs with 1/4 cup grated cheese. In large skillet over medium-heat, heat 2 tablespoons oil. Dredge chicken lightly in flour and then in egg mixture. Add dredged slices immediately to hot skillet; saute for about 1 to 2 minutes on each side until golden. As chicken is browned, place slices on a baking sheet covered with paper towels and keep warm in oven. Sauté remaining chicken, adding more oil to skillet if necessary.
  3. Meanwhile, in large saucepot over high heat, cook pasta in boiling, salted water according to package instructions. Add broccoli florets to boiling pasta water for last 2 minutes of cooking time. Pour pasta and broccoli into colander to drain.
  4. In skillet add butter; place over medium heat and cook until butter melts. Stir in lemon juice and capers. Return cooked pasta and broccoli to saucepot and toss with remaining grated cheese.
  5. Spoon pasta and broccoli onto heated serving platter. Top with chicken breast and piccata sauce. Garnish with lemon slices and chopped parsley.

Had some thin sliced chicken someone brought over for a bbq a couple days ago but didnt notice the "Thin" on the package. So I looked up this Piccata recipe. I cooked it for my wife and we both thought it was d-lish!! Have the page book marked and will cook it again, for sure! Thanks!!

So I made this dish tonight and I was not happy with it. The chicken was awesome, but the sauce was not enough. NEED MORE SAUCE if you use the whole pasta box.

I prepared this for my wife - she rivaled the flavor to that of the Cheese Cake Factory. The recipe was easy (with one flaw, it does not mention when to add the lemon juice, so I did it when I added the capers).

The portions were hearty, leaving me with leftovers for work and the satisfaction of there being several envious co-workers of mine tomorrow when I heat up my lunch.

I would surely recommend this recipe to all my friends and family.
