1 package
1/4 cup lime juice
2 tablespoons honey
2 tablespoons hot pepper sauce
2 tablespoons olive or vegetable oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon ground allspice
1 cup sweetened flaked coconut, toasted


  1. Preheat grill or broiler.
  2. In medium bowl, combine lime juice, honey, hot pepper sauce, oil, thyme, salt and allspice until blended.
  3. Grill or broil chicken, turning occasionally and basting with lime mixture, 20 minutes or until thermometer inserted in thickest part of drumstick registers 180°F.*
  4. When chicken is done, immediately roll and press in toasted coconut until evenly coated.

Note

Do not baste during last 5 minutes of grilling.
