Italian Grilled Turkey with Grilled Tomatoes Recipe

1 package
4 medium tomatoes
1/4 cup olive oil (Alternate: vegetable oil)
3 tablespoons balsamic vinegar
2 cloves garlic, finely chopped
3 tablespoons chopped fresh basil and/or rosemary
Salt and ground pepper to taste
Grated Parmesan cheese
Crusty Italian bread


  1. Preheat grill or broiler.
  2. To prepare tomatoes, cut top off each tomato then using spoon, core about half of center out, forming a cup.
  3. In small bowl, combine oil, vinegar, garlic, basil, salt and pepper until blended. Drizzle 1 teaspoon of basting sauce into each tomato.
  4. Grill or broil turkey, turning occasionally and basting with remaining sauce, 20 minutes or until meat thermometer inserted in center registers 165°F. Note: Do not baste during the last 5 minutes of grilling.
  5. Grill tomatoes away from direct heat (over the off side of the grill or on the edge of grill); 5 minutes or until heated through.
  6. To serve, sprinkle turkey with grated Parmesan cheese and serve with tomatoes and crusty bread.
