can (15 ounces) cannelloni, drained and rinsed (Alternate: white kidney beans)

can (4 ounces) diced mild green chilies, undrained
Sprigs fresh cilantro (optional)
In a large pot over medium-high heat, heat oil.
Add onion; sauté 2 to 3 minutes, until softened and translucent.
Add ground chicken; sauté 5 to 7 minutes, until no longer pink.
Add chili seasoning, broth, beans and chilies; bring to a boil.
Reduce heat to medium-low; simmer 5 to 10 minutes, until all flavors are blended.
Tip
For other twists, use pinto beans, black beans or garbanzo beans. Sour cream, green onion and shredded Cheddar cheese make good toppings.

Too much Sodium
A suggestion to reduce the sodium would be to use a reduced sodium chili spice packet. Perdue Farms.

This is a quick, easy and delicious recipe! I would definitely add more spice to it next time because I prefer a hotter chili, but it was really great! To reduce the sodium content I used dried beans instead of canned.

We love this dish; make it at least twice a month, esp in colder seasons. We serve it over rice with shredded cheese (usually the Mexican blend). It is a regular go-to meal. (we always use the ground chicken--much tastier than the turkey)
