Preheat broiler. Sprinkle cutlets with salt and pepper, place on broiling pan. Broil 3 to 5 inches from heat source 1 1/2 to 2 minutes on each side, until cooked through.
Meanwhile, in small bowl, combine oil, Italian seasoning and garlic. Brush on bread and place in broiling pan with cutlets; toast lightly on both sides.
To serve, arrange cutlets on toasted bread. Top with sliced tomatoes and sprinkle with cheese. Place under broiler just until cheese melts. Garnish with herb sprigs, and serve immediately.
