Cajun/Creole seasoning, to taste
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped ham
1/2 cup uncooked rice
1 can (14 1/2 ounces) Mexican-style tomatoes
1 3/4 cups chicken broth or water
1 can (15 ounces) black-eyed peas, drained (15 ounces)


  1. Split hens in half lengthwise. Rub all over with Cajun/Creole seasoning.
  2. Heat oil in a medium-sized pot over medium heat. Add hens and brown 5 minutes each side; remove and set aside. Add onion and ham; sauté until onion is soft and ham's edges are getting crispy. Return hens to pot; stir in rice, tomatoes and broth. Cover and reduce heat to low. Simmer 20 minutes, stirring occasionally.
  3. Add black-eyed peas and continue to simmer 10 to 15 minutes, until hens are fork tender and rice and peas are cooked.
