2 tablespoons golden raisins
1/4 cup Marsala wine
1/4 cup all-purpose flour
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 teaspoons unsalted butter, divided
4 teaspoons olive oil, divided
1/2 cup thinly sliced shallots
1/2 cup
   Alternate Perdue Products:
2 cups baby arugula


  1. Place the raisins in a small bowl; top with wine and set aside. Place the flour and half the salt and pepper in a pastic re-sealable bag. Add the chicken and seal the bag; shake until coated evenly. Shake off the excess and place on a plate; set aside.
  2. Heat half the butter and oil in a skillet set over medium heat. Cook the shallots, stirring occasionally, for 3 minutes or until golden brown. Transfer to a plate.
  3. Add the remaining butter and oil to the skillet. Cook the chicken for 7 to 8 minutes per side or until cooked through. Transfer to the plate with the shallots.
  4. Add the wine-raisin mixture to the pan. Simmer for 2 minutes or until the wine is reduced. Add the chicken stock and remaining salt and black pepper. Simmer for 5 minutes or until stock is reduced by almost half.
  5. Stir in the arugula until wilted. Return the chicken and shallots back to pan. Cook for 2 minutes or until warmed through. Spoon sauce over chicken to coat. Serve immediately.

  1. Spinach can be used in place of arugula.
  2. Serve with shredded parmesan cheese.
