Chipotle Chicken Gazpacho Salad

1/2 cup Greek-style non-fat plain yogurt
1 tablespoons red wine vinegar
1/4 cup crumbled feta cheese
2 tablespoons fresh parsley, chopped
1 1/2 cup grape tomatoes, halved
1 1/2 cup seedless cucumber, diced
1 1/2 cups yellow bell pepper, diced
1/2 cup red onion, minced
ground black pepper, to taste


  1. Grill chicken breasts 3-4 minutes per side or until firm to the touch. Remove from the grill and keep warm.
  2. In a large bowl combine yogurt, vinegar, feta and parsley; mix well. Stir in remaining ingredients and toss to coat. Divide salad among 4 plates. Top each with a chicken breast and serve immediately.
