8 thick slices sweet onions
3 tablespoons vegetable oil
2 tablespoons barbecue spice rub, divided
1 cup zuchchini, 1 inch chunks
1 cup yellow squash, 1 inch chunks
8 large grape tomatoes
4 bamboo skewers, 8-inch, soaked in water


  1. Place onion rings on a baking sheet and brush with oil on both sides. Sprinkle onions evenly with 1 tablespoon barbecue spice rub. Grill onion slices until softened and slightly browned, about 6 minutes. Remove from grill and reserve.
  2. Grill chicken wings over medium until browned and cooked through, about 10-12 minutes. Remove from heat and keep warm.
  3. Meanwhile, skewer vegetable chunks on skewers and brush with oil. Sprinkle evenly with remaining barbecue spice rub and grill vegetable skewers on each side until marked and heated through. Remove from heat and reserve.
  4. For each serving, pile 1/2 cup grilled onion rings onto a plate and top with 2 grilled chicken wings. Place a vegetable skewer along side and serve.
