2 cups fresh mango, diced
1 1/2 cups corn kernels
1 can (15.5 ounces) black beans, drained and rinsed
1/4 cup fresh lemon juice
2 tablespoons olive oil
2 tablespoons fresh cilantro, chopped
2 cups cilantro rice, optional


  1. Grill chicken drumsticks 6 minutes per side until golden brown. Set aside and keep warm.
  2. In a bowl combine mango, corn, beans, lemon juice, olive oil and cilantro; mix well.
  3. Place 1 cup of salad mixture on a plate. Top with 2 drumsticks and 1/2 cup cilantro rice, if desired.
