2 cloves garlic, minced
1/2 teaspoon oregano leaves
2 tablespoons lemon juice
1 egg, well beaten
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup cracker meal
3 tablespoons olive oil, divided
1 medium onion, thinly sliced
1 teaspoon chopped parsley
Chopped parsley to garnish
Lemon wedges to garnish


  1. Place chicken on a plate or shallow bowl. Rub garlic on chicken; sprinkle with the oregano leaves and drizzle with lemon juice. Cover; refrigerate up to 1 hour. Meanwhile, combine salt, pepper and cracker meal on a plate; set aside.
  2. Dip chicken in egg then coat evenly with the cracker meal. Heat 2 tablespoons of the oil in large skillet over medium high heat. Cook chicken until golden brown on both sides, about 8 to 10 minutes, turning once or until a thermometer inserted into center of chicken breast reads 170°F. Place on plates or platter; keep warm.
  3. Heat remaining 1 tablespoon oil.  Add onion; cook and stir until golden brown, about 3 to 4 minutes stir in chopped parsley. Garnish with additional parley and lemon wedges, if desired.
