1 package
1 head romaine lettuce, washed and cut
1 cup pineapple, diced
1/2 cup red onion, sliced
2 cups cherry tomatoes
2 ounces bleu cheese dressing
Marinade:
1/4 cup jerk seasoning
2 tablespoons lime juice
1 tablespoon low sodium soy sauce
3 tablespoons olive oil
3 tablespoons molasses


  1. Mix together marinade ingredients in a large ziploc bag. Add chicken breast tenders and evenly coat with marinade. Seal and refrigerate 15-20 minutes.
  2. Place chicken breast tenders on grill and cook for 3-4 minutes per side. Or place chicken breast tenders on a non-stick sheet pan and bake at 375°F for 12-15 minutes or until an internal temperature of 170°F is reached.
  3. To make the salad, place cut romaine, pineapple, onion and tomatoes in a large bowl and toss with dressing until evenly coated. Top with jerk chicken to serve.

Tip

Add or reduce jerk seasoning for a hotter or milder dish.
