Chicken Panini with Fig Jam Recipe

3 cups
1/3 cup fig jam or fig preserves
4 whole grain ciabatta rolls
1 large tomato, sliced
1 1/2 cups arugula, washed and dried
1/3 cups bleu cheese crumbles

  1. Preheat a panini grill to medium-high heat.
  2. Cook chicken strips according to package instructions.
  3. To assemble panini, spread fig jam/preserves on the bottom half of the ciabatta roll, layer grilled chicken strips on top, followed by arugula, bleu cheese crumbles and the top of the roll.
  4. Place sandwich on preheated panini grill and close for 4-6 minutes or until sandwich is pressed and grilled to your liking.


If you do not have access to a panini grill, you can press the sandwich with a spatula on a heated grill pan, flipping once.

This would be deliciously healthy! Whats not to love. Chicken is my favorite meat, There is no wrong way to cook chicken. This would be great to take for my lunch break.

This sandwich is great but I think I will do without the blue cheese. Maybe a cheddar or American, even a provolone but never a blue cheese. I hate blue cheese.

This sounds different, but I enjoy adding fruit to foods that you would not ordinarily add it to such as eggs in an omlette. I think you will be pleasantly surprised by the combination of the chicken and fig jelly or preserve, and the other additions. I personally would leave the tomato out.

I liked everything about this panini except the Fig Jam, my husband tried it with the Fig Jam and really liked I tried with Cranberry sauce and it was best. I'm not a big fan of Fig Jam. All and all this was a big hit with my husband. Very easy to prepare.

we really loved the tenderness and flavor of the chicken.its the first time we had fig jam it went well with this penini. i used flat bread i can not have hard rolls my hubby doesnt like tomatoes and i can not have them so i did not put any on. this was our first time trying bleu cheese we loved it on the chicken panini i will make this again.

If you love sweet/savory combo than this is for you! make sure your tomato is nice and ripe also I tried with a sourdough bread and it was amazing!

I love the flavor combinations for this recipe but I am not a big fan of blue cheese. I tried this without the blue cheese and loved it!
