1/3 cup crumbled blue cheese, divided
1/3 cup light mayonnaise
3 tablespoons diced celery
1 teaspoon Buffalo sauce, to taste
4 hamburger-style rolls, or Ciabatta or whole grain rolls
1 cup shredded iceberg lettuce


  1. Heat chicken cutlets according to package directions.
  2. In a bowl combine blue cheese, mayonnaise, celery and buffalo sauce.
  3. Spread the base of each bun with 1 tablespoon blue cheese mixture. Top with prepared cutlet, 1/4 cup shredded lettuce and 1 tablespoon of blue cheese mixture. Serve immediately.
