   Alternate Perdue Products:
1/3 cup light mayonnaise
1 tablespoon Dijon mustard
1/3 cup dried cranberries
1/3 cup sliced scallions
1/3 cup toasted, chopped walnuts or pecans, optional
Leaf lettuce
8 slices whole grain bread or 4 deli flats, optional


1. In a large bowl combine mayonnaise and mustard and mix well. Add Roasted Chicken strips, cranberries, scallions, and chopped nuts, if desired and mix well.

2. Spoon a hefty 1/2 cup of the chicken salad onto a lettuce leaves and serve.

Note

Chicken Salad can also be served on whole grain bread or deli flats, if desired.
