   Alternate Perdue Products:
1 cup julienned snap peas, blanched
1 cup blueberries
1/4 cup chopped scallions
1/3 cup prepared citrus ginger dressing
1 ripe cantaloupe


1. In medium bowl, combine Roasted Chicken strips, snap peas, blueberries and scallions; add dressing and toss together to coat. Cover and refrigerate 30 minutes while preparing melon.

2. Quarter melon and scrape out the seeds. Remove rind if desired.

3. To serve, scoop approximately one cup of the chicken salad over the melon quarter and serve.
