1 package
Juice and zest from 1 lime
Salt and pepper to taste
1/3 cup chipotle mayonnaise
5 sesame seed buns, toasted or grilled
5 red or green lettuce leaves
5 tomato slices
2/3 cup shredded, smoked Cheddar cheese or 5 slices smoked Cheddar cheese

1. In gallon-size zippered plastic bag, place chicken breast and juice and zest from lime and toss to coat; season with salt and ground black pepper. Close zipper on bag and refrigerate at least 15 minutes or until ready to grill.

2. Spray grill or grill pan with vegetable cooking spray and preheat to medium-high heat. Grill chicken for about 3-4 minutes per side until cooked through and golden brown (thermometer inserted in the thickest part of chicken registers 170°F). Remove from grill and keep warm.

3. For each stack, spread grilled bun with 1 tablespoon chipotle mayonnaise and top with a lettuce leaf, 1 slice of tomato and one grilled chicken breast. Sprinkle top of chicken breast with 2 tablespoons cheese. Replace top of bun and serve.

Great idea and just skip the cheese and add BBQ chipotle sauce.

I like to add a half can of store cranberry sauce to my mayo - - for a wonderful sandwich. Also shredded carrots and cream cheese can be added for a treat worth trying again! I love the thick slice of tomato and a hearty stack of lettuce on my sandwich - on a toasted bun ! Sounds great - I gotta go fix me one right now !
