1 package
2 tablespoons canola oil
1/4 cup finely chopped shallots
3/4 cup chicken broth
Juice and zest of 1 lemon
1/2 teaspoon cracked black pepper
Salt and pepper to taste
2 tablespoons grated Parmesan cheese
1 tablespoon chopped parsley, optional


1. In a large skillet, heat oil over medium heat; add chicken breasts and sauté until golden brown on both sides (2-3 minutes per side).  Remove from pan and set aside in a warm place.

2. Add shallots to the skillet and add chicken broth, lemon juice and zest and cracked black pepper.  Reduce by half. Return chicken to the sauce and reheat chicken. Adjust seasonings with salt and ground black pepper, if desired.

3. Serve chicken sprinkled with fresh grated Parmesan cheese and parsley, if desired.

This was so delicious. I used chicken tenderloins and used sweet onion instead of shallots (since I didn't have any on hand). I served it with steamed spinach, over parmesan couscous. It was a perfect meal!
