2 cups diced
1 can (14 1/2 ounces) diced tomatoes
1 can (8 ounces) tomato sauce
1 can (15 ounces) black beans, drained and rinsed
1 can (8 ounces) corn, drained
1/4 cup water
2 tablespoons packaged chili seasoning mix or 1 tablespoon chili powder
Shredded cheddar cheese and diced avocadoes, optional


  1. In medium saucepan, combine all ingredients and bring to a boil over medium-high heat.
  2. Reduce heat to medium.  Cover and cook, stirring occasionally, for 10 minutes.
  3. Uncover and cook an additional 3 minutes.
  4. Serve, if desired, with shredded cheese and avocado.
