1/4 cup corn oil (Alternate: vegetable oil)
1/2 teaspoon ground annatto (Alternate: saffron)
1/4 cup finely chopped onion
2 garlic cloves, minced
1 tabelspoon fresh lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper


  1. Preheat grill or broiler.
  2. Mix oil, annatto, onion, garlic, lemon juice, cumin, salt and red pepper in a small bowl, until blended.
  3. Grill or broil chicken breasts, turning occasionally and brushing with seasoning mixture for 15 minutes or until meat thermometer inserted in center registers 170°F.
