Harvest Apple Chicken Salad

cups (about 5 ounces) mixed salad greens

cup shredded carrots
|

apples, red or green, cored and cut into half inch cubes

cup toasted or candied pecans
|

cup dried sweetened cranberries
|

cup blue cheese crumbles, optional

Dressing:
|

tablespoons apple cider vinegar
|
|

tablespoons honey
|
|
4 1/2

tablespoons olive oil
|

teaspoon salt
|
|

teaspoon pepper
|

- Combine salad greens, carrots, and apples in a large mixing bowl.
- Whisk together vinegar, honey, oil, salt and pepper in a small bowl. Reserve 4 tablespoons of dressing and pour remainder over salad greens.
- Evenly divide greens over 4 serving platers. Top with chicken, pecans and blue cheese, if desired. Drizzle with with remaining dressing and serve.
