   Alternate Perdue Products:
2 tablespoons olive oil
1 loaf focaccia, cut into 4 pieces then cut each piece in half
4 tablespoons prepared basil pesto*
1 cup baby spinach leaves, stems removed
1/2 cup roasted red pepper, thinly sliced
1/2 medium red onion, thinly sliced
4 slices provolone cheese, cut to fit inside bread


  1. Preheat griddle to medium.  Brush outside of focaccia slices lightly with olive oil.  Spread inside of focaccia slices with pesto.
  2. Place on bottom slices, dividing evenly:  spinach, red pepper, chicken, onion and cheese.  Place focaccia tops over sandwich and press firmly together.
  3. Grill on medium heat about 4 minutes until lightly browned on both sides and cheese is starting to melt.
