cup bottled creamy poppyseed dressing or homemade poppyseed dressing (recipe follows)
Bibb lettuce leaves
Chopped toasted pecans and small bunches of red seedless grapes for garnish
Poppyseed Dressing:

tablespoons cider vinegar

tablespoons sugar

tablespoons finely chopped yellow onion
1/4
teaspoon mustard powder
1/4
teaspoon salt
1/4
teaspoon pepper
1/4
cup canola oil
1
teaspoon poppyseeds
Combine the chicken, grapes, celery, green onions, and dried cherries in a large bowl. Add the dressing and stir until evenly combined.
Serve on lettuce leaves and garnish with pecans and grapes.
Poppyseed Dressing Instructions:
Combine the vinegar, sugar, onion, mustard, powder, salt and pepper in a blender container. Blend at low speed until the sugar is dissolved. With the blender running, slowly add the oil. Continue to blend until thick.
Stir in the poppyseeds.
Note
You may use your favorite dressing.

Loved this recipe, made it with Maple Grove Fat Free poppy dressing and it was still delicious! This is my new favorite! =o)

My daughter and I thought this recipe looked terrific... and it was! Even my "meat and potatoes" husband liked it. We used the Shortcuts... breasts grilled, Brianna's poppyseed dressing and toasted walnuts (instead of pecans). Next time I'm going to try Craisins instead of the dried cherries; I think golden raisins'd be good too. This recipe's definitely in the "keeper/do again file".
