Ingredients

2 cups diced or shredded, cooked PERDUE® chicken meat
1/2 cup chopped walnuts
4 cups mesclun mixed greens
1 cup diced apple, favorite variety
1/2 cup dried cranberries
1/2 cup crumbled goat cheese
1/4 cup olive oil
2 tablespoons red wine vinegar
Salt and pepper

 

Instructions
  1. Preheat oven to 350° F.
  2. Place chopped walnuts on a baking sheet and toast 5 minutes, until fragrant.
  3. Place in a serving bowl with greens, 2 cups diced or shredded, cooked chicken meat, apples, cranberries and cheese.
  4. Whisk together oil, vinegar, and salt and pepper to taste. Toss dressing with salad and serve.
