Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Turkey Breast Tenderloins 1/2 cup lime juice 1/2 cup water 1 Anaheim chile, seeded and chopped 2 cloves garlic, minced 1 tablespoon olive oil 2 bell peppers (1 red and 1 green), seeded and cut in strips 1 onion, peeled and cut in eights 4 flour tortillas Prepared salsa
Instructions
- In baking dish, combine lime juice, water, chile, garlic and oil. Place tenderloins, peppers and onion slices in lime mixture and toss to coat well. Cover and refrigerate 30 minutes or up to several hours.
- Place large, nonstick skillet over medium high heat. Add tenderloins; brown 1 minute on each side. Add peppers and onions; and continue cooking 4 to 6 minutes, until tenderloins are cooked through and vegetables are tender crisp, stirring frequently.
- Place tenderloins and vegetables on each warm tortilla. Roll tortilla jelly-roll style, to enclose filling. Serve “roll-ups” with salsa and guacamole.
