Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Thigh Filets 1/2 cup coconut milk 1/4 cup lime juice 1/4 cup chopped fresh mint 1 tablespoon hot pepper sauce 1/2 (1 pound) box fettuccine Coconut Sauce: 2 cups chopped fresh mango 1 cup coconut milk 1/3 cup lime juice 1/4 cup minced red onion 1/3 cup chopped red pepper 1/4 cup chopped fresh mint 1/4 cup chopped fresh basil Crushed red pepper flakes to taste
Instructions
- Place coconut milk, lime juice, mint and pepper sauce in a resealable bag. Add thighs. Seal bag and refrigerate 4 to 24 hours, turning occasionally.
- Preheat grill to medium-high heat. Meanwhile, cook fettuccine in salted boiling water until al dente; drain.
- Remove chicken from bag and discard marinade. Grill chicken about 5 minutes per side, or until a meat thermometer inserted in thickest part registers 180°F. Cut into strips and toss with cooked fettuccine and warm Coconut Sauce.
- To prepare Coconut Sauce, combine all ingredients in a saucepan, stirring over low heat until warm throughout. Serve in shallow bowls.
