Ingredients
1 package PERDUE® Fresh Chicken Drumsticks 1/4 cup soy sauce 1/4 cup pineapple juice 5 tablespoons brown sugar, divided 2 tablespoons olive oil (alternate: vegetable oil) 1 teaspoon garlic powder 1/2 teaspoon ground ginger 3 cups large fresh pineapple chunks 2 mangoes, peeled and cut into 1-inch chunks (about 3 cups) Kebab skewers*
Instructions
- Preheat grill or broiler. In small bowl, whisk together soy sauce, pineapple juice, 3 tablespoons brown sugar, oil, garlic powder and ginger until blended.
- Grill or broil chicken, turning occasionally and basting frequently with soy mixture, 20 minutes or until meat thermometer inserted in thickest part of drumstick registers 180°F. Note: Do not baste during last 5 minutes of grilling.
- Meanwhile, alternately thread pineapple and mango chunks on skewers. Sprinkle remaining 2 tablespoons brown sugar over fruit kabobs. Grill kebabs away from direct heat (over the "off" side of the grill or on the edge of grill), 3 minutes or until heated through.
- Serve chicken with fruit kebabs.
*Note: If using bamboo skewers, soak in hot water 30 minutes before using.
